Chicken breast with olives

Before telling you more about South Africa and its lovely wines in the next post, I present you a Southern European inspired recipe. Those who like dark olives will love it.
I got the idea when I was strolling over the market. I love this because I always discover something new and looking at all the fresh products is very inspiring to me and I get a lot of ideas what I’d like to cook. It also happened this time, when I passed by my favourite olive shop. They also have meat products from Germany, France and Italy, fresh pasta and bread, but I especially like their olives. They offer olives of all kind – big, small green, black, with stone, without, stuffed with paprika, almonds, garlic, herbs and some more specialties. I especially like that the olives there are of such high quality and intense taste. Sometimes I offer olives for the aperitif when having guests, I always get them at this market stand. This time I got inspired to prepared chicken breast with olives.



Ingredients (for 2 persons):
300 g chicken breast
1 lemon
5 branches of parsley
80 g black olives
50 ml olive oil
1 small onion
Salt, pepper



Squeeze the lemon, wash and cut the parsley.
Pit the olives (if they have stones).
Cut the onion, then cut the chicken into small cubes (ca. 2x2cm).
Heat 2 tablespoons of olive oil in a pan and gently roast the chicken cubes for a short moment, salt and pepper.
Stir in the onion and continue roasting on low heat. Then add the rest of the olive oil and continue cooking for about 15 minutes. Now stir in the lemon juice and the olives and continue cooking for 5 minutes. Add half of the cut parsley and let cook for 2 more minutes. On the plates, garnish the dish with the rest of the fresh parsley. To accompany with basmati rice.





Hähnchenbrust mit Oliven



Bevor ich im nächsten Post von der Weinregion Südafrikas berichte, stelle ich heute ein südeuropäisch inspiriertes Gericht vor, das allen schmecken wird, die den vollen und identischen Geschmack der dunklen Oliven mögen.
Die Tage bin ich, wie so häufig, mal wieder auf dem Markt gewesen, weil es immer Spaß macht zu schauen, was an Leckerem es zu entdecken gibt und ein Besuch auf dem Markt immer sehr inspirierend ist. Beim Anblick all’ der guten Produkte kommen mir stets viele Ideen für Rezepte. So war’s auch, als ich bei meinem Lieblings-Oliven-Laden einen Blick auf die Theke geworfen habe. Dort gib es auch leckere Fleischwaren aus Deutschland, Frankreich und Italien, frische Pasta und Brot, ganz besonders ansprechend ist aber die Olivenauswahl. Es gibt große Oliven, kleine, grüne, schwarze, mit und ohne Stein, gefüllt mit Paprika, Mandel, Knoblauch, mit Kräutern und noch ein paar Sorten mehr. Vor allem aber sind die Oliven von einem unverwechselbar guten Geschmack. Gerne biete ich Gästen zum Aperitif auch ein paar von diesen Oliven an. Mit den dort gekauften Oliven habe ich dieses Mal ein Hähnchengericht zubereitet, wer dunkel Oliven mag, wird es lieben.



Zutaten (für 2 Personen):
300 g Hähnchenbrust
1 Zitrone
5 Zweige Petersilie
80 g schwarze Oliven
50 ml Olivenöl
1 kleine Zwiebel
Salz, Pfeffer



Zitrone auspressen, Petersilie waschen und klein schneiden.
Oliven entsteinen (falls sie Steine haben).
Zwiebel klein schneiden.
Hähnchen in Würfel (ca. 2x2cm) schneiden.
2 EL Olivenöl in der Pfanne erhitzen und die Hähnchenwürfel von beiden Seiten kurz anbraten, salzen, pfeffern.
Bei niedriger Hitze die Zwiebel hinzugeben und kurz anbraten.
Nun den Rest des Olivenöls hinzugeben und das Ganze ca. 15 Minuten köcheln lassen.
Anschließend den Zitronensaft und die Oliven hinzugeben, für weitere 5 Minuten bei niedriger Hitze kochen. Die Hälfte der geschnittenen Petersilie hinzugeben umrühren und für 2 Minuten weiter braten.
Fertig, auf den Tellern verteilen und mit der restlichen Petersilie bestreuen.
Als Beilage passt Basmati-Reis sehr gut.

  3. Um, YUMMY! Being Italian, I always have black olives in the house. I made this tonight. I had to hold back everything I had to not add endive and red chichory which I had in the fridge and kept it simple. Used them in the salad instead. the chicken/olives was super delish. but mine didn't look as pretty as yours. my onions browned too much. still yummy. thanks!
