Couscous Salad

Last weekend was the Christmas party at the dance centre where we attend dance classes (waltz, samba, tango etc.). Every year, this is a highlight – for the welcoming atmosphere, the dance shows and events they offer, but also for the buffet. They stick to the very popular concept of everybody brings something. I decided to make a couscous salad. This is one of my favourite recipes for parties or picnics, very tasty and easy to prepare. At the end of the evening I was happy to see that nothing was left over of our couscous salad. I should have made some photos of the buffet, so many people brought lovely homemade food, just at its best. Well, at least you can have a closer look on my favourite couscous salad recipe.


Ingredients for a large bowl of couscous salad:
250 g couscous
2 little onions
1 cucumber
Parsley
1-2 pepper (red, yellow)
12 little tomatoes
12 sun dried tomatoes
10 tablespoons of olive oil
Salt


Cook the couscous as indicated on the package, let it cool down.
Cut the parsley and vegetables small, they should not be bigger than one cm.
Put the couscous into a bowl and add 5 tablespoons of olive oil and salt.
Now mix it with the cut parsley and vegetables, one after the other. When everything is well mixed add the remaining 5 tablespoons of olive oil and taste, if necessary add some more salt.
Before serving, put the salad into the fridge for at least 2 hours.


Couscous Salat


Letztes Wochenende war die Weihnachtsfeier der Tanzschule, bei welcher wir regelmäßig zu Walzer, Samba, Tango & Co das Tanzbein schwingen. Die Feier ist jedes Jahr ein Highlight, der netten Atmosphäre und der professionellen Tanzeinlagen wegen, aber auch aufgrund des leckeren Buffets, das immer vielerlei Köstlichkeiten zu bieten hat. Es ist ein typisches “Jeder-bringt-was-mit-Buffet“, bei welchem eine Vielfalt an selbst gemachten Köstlichkeiten angeboten werden. Ich hab’ mich für eines meiner Lieblings-Rezepte entschieden, das ich immer gerne bei Partys und Picknicks mache: einen Couscous Salat. Er ist einfach zu bereiten und schmeckt immer sehr frisch. Als ich am Ende des Abends die Schüssel wieder einpackte war alles aufgegessen, bekanntlich das beste Lob für einen Koch.



Zutaten für eine große Schüssel Couscous Salat:
250 g Couscous
2 kleine Zwiebeln
1 Gurke
1 Bund Petersilie
1-2 Paprika (rot, gelb)
12 kleine Tomaten
12 getrocknete Tomaten
10 Esslöffel Olivenöl
Salz



Den Couscous wie auf der Packung beschrieben kochen und abkühlen lassen.
Die Petersilie klein hacken, das Gemüse in kleine Würfel schneiden (maximal 1 cm).
Den Couscous in die Schüssel geben, 5 Esslöffel Olivenöl dazugeben und unterheben, salzen.
Nun die Petersilie und das Gemüse nacheinander dazu geben und gut unterheben. Wenn alles miteinander vermischt ist die restlichen 5 Esslöffel Olivenöl dazu geben und unterheben, abschmecken und bei Bedarf nochmals nachsalzen.
Bevor der Couscous Salat serviert wird, für mindestens zwei Stunden im Kühlschrank kalt stellen.

  1. I love to bring baked goods in with me to dance. All the male instructors love it, and the girls are all terrified they won't fit into their costumes for competition. I love couscous, and I'm guessing some olives or capers would be fabulous in the salad.

  3. Ich liebe Couscoussalat! Mache ihn sehr ähnlich wie Du, nur dass ich gerne noch Kichererbsen und/oder Feta und/oder Rosinen hinzufüge. Muss ich unbedingt mal wieder machen - wahrscheinlich gleich nach den Feiertagen, wenn man leichtes, frisches Essen will ;o)
