Dover sole wrapped in ham

I remember that many years ago it was kind of an unwritten law not to mix fish and meat in one dish. For quite some years now, this rule is broken, and for good reasons. I recently thought of a dish that combines fish and ham and even some vegetable. It is easy to prepare, so if you are looking for a meal that changes a bit from the ordinary, this one could give you some inspiration. The result was just as I had imagined, very tasty.


Ingredients for 3 persons:
3 filets of Dover sole
3 slices of smoked ham
9 sun dried tomatoes
Some branches of fresh parsley
3 tablespoons of olive oil
1 egg white

Preheat the oven to 200°C. Rub a casserole dish with olive oil. Wash and roughly cut the parsley.
Salt and pepper the filets. Put the egg white into a small bowl and therein turn the filets into the egg white.


Put the ham on a cutting board and add the fish on it, followed by the parsley and finally put 3 sun dried tomatoes on each filet.


 
Now roll up and tie with a kitchen string. Put them into the casserole dish and trop each with one table spoon of olive oil. Let cook them in the oven for 25 minutes. To accompany I suggest pasta and green salad.



Seezunge im Schinkenmantel



Galt früher noch die strenge Regel, dass Fleisch und Fisch nicht kombiniert werden durften, so wird schon seit einigen Jahren mit Erfolg genau diese Regel gebrochen. Heute zeig’ ich Euch eine Kreation, die ich auf diesem Feld vor kurzem ausprobiert habe, und ich war begeistert. Das ganze ist einfach her zu stellen, sieht prima aus und schmeckt durch die Mischung der Zutaten (Fisch, Schinken, getrocknete Tomaten und Petersilie) herrlich abwechslungsgleich und dennoch harmonisch.



Zutaten für 3 Personen:
3 Filets Seezunge
3 Scheiben geräucherter Schinken
9 eingelegte Tomaten
Ein paar Zweige frische Petersilie
3 EL Olivenöl
1 Eiweiß

Den Ofen auf 200°C vorheizen. Eine Auflaufform mit Olivenöl einreiben. Die Petersilie waschen und grob schneiden. Die Seezungenfilets auf beiden Seiten salzen und pfeffern. Das Eiweiß in eine kleine Schüssel geben, die Filets darin wenden.



Auf ein Arbeitsbrett die Scheiben geräucherten Schinken und darauf die Filets legen. Nun die Petersilie auf den Filets verteilen und darauf je 3 getrocknete Tomaten verteilen.



Die Filets zusammenrollen und mit einem Küchenfaden zusammen binden. Die Röllchen nun in die Auflaufform stellen und jeweils mit einem EL Olivenöl beträufeln. Anschließend 25 Minuten im Ofen kochen lassen. Dazu passen z.B. gut Pasta und grüner Salat.

    Das Gericht ist direkt mal auf die Nachkochliste gekommen. Habe Schinken und Fisch bisher nur einmal als Lachs Saltim Bocca kombiniert. War auch sehr lecker :)

  9. @kyleen: yes, what I call here smoked ham is very similar to prosciutto, infact you could use prosciutto, there is no big difference in taste, the name describes more the region where the ham was produced.
